This week's Vanishing Vegan Treat Theme will be....



CARROT MADNESS!

Gwendolyn is very excited about this week's offerings. Who wouldn't want to eat their vegetables in the form of a cookie or muffin?

Especially when you get to eat cookies for breakfast!


Happy Sunshine Breakfast Cookie
Come hungry to the farmers market tomorrow and eat breakfast with Gwendolyn! This is a morning meal disguised as a cookie!
This version is not AS healthy as it COULD be, but they are made with whole wheat flour and rolled oats, have zero sugar, are sweetened with a scant 1/2 cup of maple syrup per batch, and are loaded with energizing nuts and dried fruits. (Dates, apricots, golden raisins, walnuts, and coconut!) If these are successful, I will tweak the recipe in the future to be even MORE healthy by adding more nutrient dense ingredients. I may even try a gluten-free version!

Carrot Raisin Muffins
Less "healthy" than our cookies, but still a delicious way to eat your veggies. These spicy sweet treats are exactly what they sound like...delicious.

Carrot Sugar Cookies
Just plain "treat" and not much on the "healthy" side of things. Hopefully these will even have green icing carrot tops--if all goes well! At the very least they will have sparkly sugar sprinkled all over them. Sparkles are Gwen's favorite!
